This step allows by addition of enzymes (pectinases) to destroy the pectins that are responsible for the opalescent appearance of the juices. The gluing is also performed. The possibility of heating during this step considerably shortens the time of enzymation and treatment (1 hour against 12 hours, for example). For this reason, the tank is agitated and thermostatically controlled.
